Chef Okuda was born in 1969 in Tsuruoka city, on the border of Niigata and Yamaga prefectures. After school, he moved to Tokyo and trained to master Italian and French cuisines, authentic French patisserie and Italian gelato. Okuda then returned to his home town and worked as a chef for two restaurants before opening Al-ché-cciano in 2000. Chef Okuda does not offer a pre-designed menu but decides what to cook from the ingredients he chooses each day. He minimises the use of sauces in order to optimise the unique flavours of each ingredient, aiming not just to please the plate but to bring joy to his customers.
MIYUKI IGARASHI(Miyu Ginza)
Chef Igarashi's talent is recognised in many innovative and lovingly crafted dishes based on his principles: maximise vegetables, bring out the natural flavour of ingredients, and create the season's best menu. He was born in 1974 in Higashi Murayama, Tokyo and enjoyed growing up in his family's Chinese restaurant. He started cooking at 14 and became a professional at 18. In 1974, 22 year-old Chef Igarashi appeared on "Iron Chef", the top Japanese culinary competition TV programme as its youngest competitor and an overnight culinary sensation. Since then Igarashi has been featured in many publications and TV programmes. These days he splits his time between Miyu Ginza's owner and head chef, and various culinary educationald and development activities.

Reservations can be cancelled free of charge up to 2 business days prior to the Date of Dining. A 50% charge of the invoiced amount will be applied if cancelled within 48 hours; and no refunds will be made for cancellations made within 24 hours of the Date of Dining.
Table bookings are essential and must be made online through our Reservation System. We do not accept walk-ins.
